Ideally, you will have blue skies (which are actually darker in relation to the landscape than on a dull grey day, where the clouds are somewhat lit up by sunlight but disperse the light in all directions so less of it hits the ground). If you do take a photo on a sunny day, it helps to take the photo facing away from the sun, so the sunlight is hitting the subject directly and you are less likely to get strong shadows or the sun blowing out the sky in the background of the photo.
